The nutritional functional substance basis and related mechanisms of sour jujube was systematically studied, systematically elucidating the main functional substance basis of sour jujube kernels (spinosin, 6 ''- feruloyl spinosin, 6 '' - coumaroyl spinosin, sour jujube kernel saponin A, sour jujube kernel saponin B, fatty oil, polysaccharides) and their related effects (sedative, neuroprotective, improving myocardial function), laying a theoretical foundation for the construction of a deep processing system for sour jujube. For the first time, it was found that the flavonoids 6-FS from jujube seeds can improve oxidative stress by reducing the accumulation of ROS in cells, alleviate cell damage induced by A β 1-42, and enhance autophagy by regulating the expression of mitochondrial autophagy related proteins mediated by Pink1/Parkin to protect damaged cells. The first systematic study was conducted on the absorption and metabolic kinetics of the main nutritional functional components of jujube, elucidating the intestinal absorption situation and absorption mechanism, revealing the disposal rules of the intestinal microbiota environment on the nutritional functional components of jujube, and clarifying the dynamic changes of the nutritional functional components of jujube in vivo.
