Abstract
The global challenge of sustainable food production and consumption can be addressed with sustainable food technologies. One such, cultured meat, can contribute to improving food security and to do so more humanely and with fewer environmental impacts than conventional meat production. However, its acceptance is hampered by government safety regulations such as those of the European Food Safety Authority (EFSA), food industry resistance, and consumer distrust. Considering trust as essential for buying and eating new food products on a regular basis, we investigated consumer trust profiles in the German population. We used latent profile analysis of online survey data from 1099 consumers to identify four profiles, distinct in their trust level toward cultured meat and corresponding actors. The smallest profile, the Trusting Consumers (17.5 %), express the highest trust level and purchase intention for cultured meat. They are more likely to be younger, more educated, have higher incomes, the highest level of involvement, and the lowest food technology neophobia. However, 24.3 % are Distrustful Consumers, who are not willing to purchase cultured meat because they distrust the EFSA, cultured meat, fellow humans, and food manufacturers. They are 56 and older, less educated, have lower incomes, and report the highest level of food technology neophobia. The largest group are the Optimistic Consumers (37.5 %), who with the Sceptical Consumers (20.7 %) are undecided in their trust level and their purchase intention for cultured meat. As they make up almost 60 % of the sample, our results suggest that further research into suitable communication measures is especially relevant for these profiles to increase trust, and thus, extend the potential consumer base for a sustainable meat product.

Abstract
INTRODUCTION The adequate consumption of protein-rich foods is essential for optimal human growth, development and health. However, climate change threatens global food security by disrupting agriculture and food supply chains. One possible strategy to avoid this is a sustainable diet and the consumption of plant-based protein substitutes, insect-derived proteins and cultured meat. METHODS The factors that could explain the (non-)acceptance of such foods in the population were investigated. The study included 458 adults who responded to our online questionnaire. RESULTS The results of our survey showed that 66.2 % of the respondents were open to including plant-based sources in their diet. 23.1 % were willing to eat meals derived from insects and 21 % were willing to eat cultured meat. Acceptance of these alternative protein sources was found to be influenced by a number of factors, including demographics, familiarity, frequency of meat consumption and the intention to reduce meat consumption in the future. Men and people who had tried insect-based foods in the past were more favourable towards the consumption of insect-based foods and cultured meat. The regression analysis showed that the higher the level of neophobia towards food technologies and aversion to eating insects, the lower the interest in trying cultured meat. Women have a lower interest in trying cultured meat. CONCLUSIONS The consumer acceptance of new protein sources in the diet can be measured by assessing their attitudes towards such sources. This understanding can in turn facilitate the formulation of future public health strategies to create more sustainable dietary standards in the face of climate change.

Abstract
This study explores consumer preferences for alternative proteins within the context of pro-environmental choices. The primary objective is to identify and analyze the factors influencing consumers' choices between alternative and traditional proteins, as well as the moderating conditions that shape these preferences. To achieve this, three sequential studies were conducted to examine the differential effects of temporal landmarks, self-transcendence, and mindset abstraction on protein choice. A randomized mixed experimental design was employed, incorporating both between-subjects and within-subjects components. Findings indicate that consumers exhibit a higher propensity to select alternative proteins during morning hours. Moreover, self-transcendence was found to mediate the relationship between temporal landmarks and protein choices, while mindset abstraction moderated this association. This research uniquely integrates temporal psychology, self-transcendence, and construal level theory to explain dynamic sustainable protein choices under climate change. It introduces morning contexts as novel antecedents of self-transcendence, demonstrating that self-transcendence mediates the impact of temporal landmarks on alternative protein preferences, with this relationship being moderated by mindset abstraction. The theoretical contribution lies in linking micro-level temporal cues to macro-level environmental values, providing a unified framework to address the "when" (time), "why" (self-transcendence), and "for whom" (abstract thinkers) of sustainable choices. Also, this research extends existing knowledge of dynamic sustainable consumption patterns. Practical implications include actionable strategies for policymakers and marketers to design time-sensitive interventions, such as morning-targeted campaigns. These initiatives leverage self-transcendent mindsets and abstract thinking to systematically promote sustainable protein adoption, thereby advancing climate change mitigation efforts.

Abstract
Since cultured meat is often framed as a more ethical alternative to conventional livestock farming, the question arises of whether it also appeals to vegetarians. To explore this, our study is among the first to examine cultured meat acceptance in a large vegetarian sample (n = 282) while using an equally sized omnivore group (n = 284) as a reference. This online study's participants were Germans aged 18 to 35. We compared both groups in terms of their associations with cultured meat, their perception of its benefits, and whether they classified it as "vegetarian." Additionally, participants rated how disgusting, tasty, healthy, eco-friendly, and natural they perceive a cultured meat burger compared to conventional and plant-based burgers. The results indicated that cultured meat presents a conflict for vegetarians: While they recognized the environmental and animal welfare benefits of cultured meat more than omnivores, they were less willing to consume it. A key barrier was uncertainty over whether cultured meat aligns with vegetarianism. Instead, vegetarians showed a clear preference for the plant-based burger over the cultured option, suggesting that many prefer familiar, plant-based foods and see little incentive to adopt this novel alternative. Across both dietary groups, gender and food neophobia emerged as key predictors of cultured meat perceptions. Overall, our study challenges the assumption that vegetarians could widely accept cultured meat as a suitable meat alternative. However, cultured meat has the potential to offer a solution for consumers who want to reduce their meat consumption but who are dissatisfied with current alternatives.

Abstract
(1) Background: In recent years, meat alternatives, including plant-based and animal cell-cultured meat, have attracted substantial interest among Chinese food science researchers and consumers, prompting considerable debate; (2) Methods: This study utilizes qualitative research methods, specifically focus group interviews with 59 participants across five administrative regions and seven cities in China, to explore consumer knowledge, perceptions, and potential acceptance of meat substitutes; (3) Results: The findings reveal that Chinese consumers generally exhibit a low level of understanding of new meat substitutes, particularly animal cell-cultured meat. Although participants acknowledge the potential environmental, resource-saving, and animal welfare benefits associated with meat substitutes, they also express concerns about perceived risks, such as artificial taste, high costs, market monopolization, diminished consumer welfare, and adverse impacts on traditional animal husbandry and employment. Despite a willingness to try meat substitutes, the regular purchase and consumption of these remain limited. The acceptance of meat substitutes is influenced by factors including personal characteristics, price, safety, and the authenticity of taste; (4) Conclusions: The study concludes that legislative support, technological advancements in production and regulation, price reductions, and the establishment of a robust traceability system may enhance consumer confidence and acceptance of meat substitutes in China.

Abstract
Alternative meat production technologies offer the potential to alleviate many of the ethical, environmental, and public health concerns associated with conventional meat production. Cultured meat produced using cell culture technology promises to become a viable alternative to animal-raised meat for the future of the food industry. The process of cultured meat production relies on cell sources harvested from livestock such as bovine, swine, and chicken. Previously, we have developed a primary culture method allowing the efficient collection of myogenic cells from bovine cheek meat. Although the myogenic cells were used as a cell source to produce bovine muscle tissues with biomimetic morphological and functional characteristics in a "biomimetic cultured beef" product, it is not certain that the cells harvested from cheek meat are the best choice as a cell source for cultured meat. Moreover, there are no previous studies investigating the appropriate selection of cell sources for producing cultured meat on demand. In this study, myogenic cells were harvested from three different cuts of swine muscle (cheek, loin, and ham) to assess the impact of each cell type and understand how to best select from the various cuts of muscle. Although it was expected that the three types of swine myogenic cells have different characteristics based on each meat cut, they all proliferated similarly while maintaining the expression of myogenic markers (MyoD, Myf5) during repeated passages. They also had differentiation ability at the same level in the first step of differentiation (fusion of myogenic cells to form myotube) in vitro. Therefore, the myogenic cells from different cuts of muscle fundamentally expressed the same characteristics in normal 2D culture. On the other hand, since our tissue engineering method allowed us to produce morphologically and functionally biomimetic muscle tissues, we successfully produced contractile muscle tissues with native-like aligned structures from all types of the swine myogenic cells. Through the tissue maturation process, the three types of myogenic cells also showed site-specificity in the further differentiation step (maturation into contractile myofibers). The myogenic cells harvested from ham formed significantly thicker myofibers in "ham muscle tissues", compared with that in "cheek muscle tissues" and "loin muscle tissues". This suggested that swine myogenic cells have some unique characteristics depending on the different cuts of muscle. On the other hand, there was no significant difference in contractile functionality between the three types of muscle tissues. Although further experiments will be required to deepen our understanding of the similarities and differences of site-specific myogenic cells, we believe that the results of this study are important to selectively produce various types of cultured meat and ultimately become the conventional meat in the future.

Abstract
Alternative proteins offer promise as a sustainable substitute for traditional meat, but consumer acceptance remains low. Understanding the perceptions and preferences of diverse consumers is critical to shifting consumption patterns globally. Moreover, as children are future consumers, exploring their perceptions of alternative proteins along with parental influences is important for driving change. We conducted semi-structured focus groups with child (9-15 years-old) and parent (38-56 years-old) pairs (n=19) in Singapore to explore (i) current awareness and perceptions of plant-based meat, cultivated meat, and insect proteins, and (ii) facilitators and barriers to consumption. Inductive (reflexive thematic analysis) and deductive approaches (using the Capability, Opportunity, and Motivation model of Behaviour; COM-B) were adopted for data analysis. Overall, we found greater awareness and acceptance of plant-based meat than cultivated meat and insect proteins. Most children presented with a general curiosity to all alternative proteins, wanting to especially understand the likeness of plant-based and cultivated meat to traditional meat. Parents acknowledged that alternative proteins provided an opportunity to add variety to their diet but were concerned with the naturalness of alternative proteins and the novel technologies used to manufacture them. Insect proteins faced fear and disgust, although the historical consumption of insects meant children and parents deemed these as safe. Taste, cost and the impact on health were also commonly discussed by both children and parents. Our findings highlight key factors that influence children and parents' acceptance and consumption of alternative proteins, which can inform the development of targeted interventions.

Abstract
This study aims to determine Turkish consumers' perceptions and attitudes toward in vitro meat and to investigate the relationship between their perceptions and their willingness to try and consume it. The questionnaire was distributed to potential participants via social media, and the responses of 989 participants were evaluated. The responses regarding the extent to which participants agreed with 32 opinions about in vitro meat were analysed using principal component analysis (PCA). As a result of PCA, four components were obtained explaining 63.3% of the total variance: i) benefits for the environment, and human and animal welfare; ii) safety and reliability; iii) social and ethical concerns; and iv) concerns about being unnatural. Regression equations developed with these components were able to moderately explain (R2 ranged between 0.547 and 0.583) the variance observed in consumers' willingness to try, regularly consume, replace conventional meat with and try in vitro meat when recommended by a friend.

Abstract
Mycoprotein (MYC) has unique mycelial properties that make it suitable for mimicking meat fibers. However, the irregular structure of mycelium creates challenges in achieving fiber alignment in meat alternatives. This study explored 3D printing technology to align MYC fibers by formulating inks with various proportions of egg white proteins (EWP) (4 %, 5 %, 6 %, 7 %) and assessing their printing performance. Results showed that extrusion-based 3D printing enabled MYC fiber alignment. The addition of EWP resulted in a nonlinear viscoelastic state in the mixed ink, and increased intra-ring strains to restrict the mobility of the moisture, likely due to hydrogen bonding between mycelial and EWP. Post-printing, the MYC-EWP matrix formed a more ordered mycelial structure. After heating, the 6 % EWP formulation exhibited improved water retention, hardness, chewiness, and other textural properties, making it comparable to beef. This study highlights the potential of 3D printing technology to enhance fiber formation in MYC-based meat alternatives.

Abstract
BACKGROUND Sustainable nutrition is based on foods with a low environmental impact, accessible and affordable, ensuring protection of the biodiversity, while including the cultural elements of each geographical region. The present cross-sectional study aimed to evaluate adherence to a sustainable diet and the perceived environmental benefit of adopting a sustainable diet among adults in Greece. METHODS The Sustainable HEalthy Diet (SHED) questionnaire evaluated sustainable nutrition practices and awareness in a sample of 607 adult Greeks recruited through social media. RESULTS A positive association was revealed between healthy eating, a plant-based diet and organic awareness. Healthy eating was related to the consumption of low-salt and low-sugar products, avoiding added salt and ultra-processed foods (UPFs), as well as limiting sweets and soft drinks. Most participants (94.6%) were flexitarians, consuming meat instead of plant-based foods, although showing a preference for legumes over meat products. Most (86.8%) failed to meet the 5-a-day recommendations for fruit and vegetables, which were bought mainly from supermarket chains, with men resolving to electronic commerce purchases, while women preferring small, local grocery shops. Most responders consumed tap water (54.9%) and homemade meals daily (75.0%). Many participants (32.8%) reported separating and recycling food scraps at home, using neighborhood composters. When organic produce was selected, this involved mainly fruits and vegetables. Between men and women, the latter adopted a plant-based diet to a greater extent, consumed fewer soft drinks, were keener to consume local produce, limit meat intake and eat crops that are pesticide- and herbicide-free. Overall, Greek consumers show preference to local products. Most of them fail to compost and cut down on meat intake. The tool's internal consistency measured by Cronbach alpha was 0.702 and 0.736 for the healthy eating and sustainable eating domains respectively, 0.798 for the environmental domain, while the other domains had lower scores due to contradictory questions. Our Confirmatory Factor Analysis (CFA) demonstrated a good fit (CFI = 0.896, TLI = 0.87) with strong positive relationships between healthy eating, a plant-based diet and organic awareness. CONCLUSIONS The results indicate that adult Greeks more easily implement some aspects of sustainable nutrition (organic, local foods), while others appear more difficult (compost, reduce meat intake). Nonetheless, the results can be useful in designing interventions to increase dietary sustainability awareness among Greeks, including educational programs and improved infrastructures.

Abstract
Cultivated meat (CM) refers to edible lab-grown meat that incorporates cultivated animal cells. It has the potential to address some issues associated with real meat (RM) production, including the ethical and environmental impact of animal farming, and health concerns. Recently, various biomanufacturing methods have been developed to attempt to recreate realistic meat in the laboratory. We therefore overview recent achievements and challenges in the production of CM. We also discuss the issues that need to be addressed and suggest additional recommendations and potential criteria to help to bridge the gap between CM and RM from an engineering standpoint.

Abstract
Background/Objectives: The escalating global demand for meat, as a sequela of population growth, has led to unsustainable livestock production, resulting in a host of environmental and food security concerns. Various strategies have been explored to mitigate these issues, including the introduction of a novel food product, cultured meat. Cultured meat is not yet commercially available, yet public perceptions are already taking shape. To better understand the factors influencing its adoption by consumers, a cross-sectional, web-based study was conducted to examine consumer attitudes toward conventional meat and cultured meat among adults in the United Arab Emirates (UAE). Methods: The survey was conducted between December 2023 and March 2024 and used a convenience snowball sampling method. The questionnaire focused on current meat consumption patterns, meat attachment, and willingness to consume cultured meat. Sociodemographic data, including age, sex, education, and self-reported weight and height, were also collected. Results: Results showed that the vast majority (86%) of participants consumed all types of meats, while more than half (59.3%) were unfamiliar with the term "cultured meat". Despite this unfamiliarity, about one-third (35%) were somewhat willing to try cultured meat, though more than two-thirds (69%) were reluctant to replace conventional meat with cultured meat in their diet. Male participants and those with higher BMIs showed a significantly stronger attachment to conventional meat. Willingness to consume cultured meat was notably higher among participants aged less than 30 years, those having less formal education, and those who are Arabic. Conclusions: These findings suggest that while interest in cultured meat exists, significant barriers remain, particularly regarding consumer education and cultural acceptance.

Abstract
The eventual reality of a cultured meat market is increasingly uncertain, primarily due to low consumer acceptance levels influenced by perceptions of unnaturalness towards cultured meat. Previous research has shown limited success in increasing acceptance through naturalness messages. In this research, we employ a counter-messaging strategy that highlights the unnaturalness of conventional meat and show that it is effective at increasing willingness to try cultured meat among a particular consumer segment. Across two experimental studies, we show that this counter-messaging strategy is successful at increasing willingness to try cultured meat among holistic mindset consumers-i.e., those holding beliefs to the effect that considering the whole is fundamental to understanding the parts of a phenomenon. We establish this effect by both measuring (Study 1) and priming (Study 2) analytic-holistic mindset and also establish the mechanism driving this interactive effect (Study 2): positively-valenced feelings. Our findings are informative theoretically, extending mindset and counter-messaging theory to the context of cultured meat and, practically, offering crucial pointers to stakeholders interested in the promotion of cultured meat.

Abstract
Plant-based dairy alternatives have many benefits in terms of sustainability, animal welfare, and health, but they can only be successful in the market if consumers perceive them as suitable substitutes for conventional dairy. Consumers' expectations for new products are strongly influenced by the food categories into which they place these products. The present study aims to reveal consumers' categorizations of plant-based dairy products to gain insights into their potential as dairy substitutes. In a free sorting task, 100 participants from the German-speaking part of Switzerland sorted a variety of plant-based and conventional animal-based dairy products into groups, indicating their spontaneous similarity perceptions. Additionally, we assessed the participants' characteristics and attitudes toward plant-based dairy products to test potential differences in categorization strategies among consumer groups. Multidimensional scaling and cluster analysis showed that consumers' mental representations of plant-based dairy and conventional animal-based dairy were clearly separated across a wide range of product types. This pattern was even observed among consumers who ate less meat, had higher exposure to vegan dietary styles, and had less negative attitudes toward dairy alternatives. The results suggest that taxonomic distinctions based on plant or animal origin dominate consumers' perceptions and are likely to hinder the substitution of dairy with plant-based dairy. Nevertheless, they also imply that plant-based products that manage to emphasize shared goals and functional properties akin to conventional dairy products are more likely to form a common goal-derived category in consumers' minds and thus have better prospects as substitutes.

Abstract
In development for almost 20 years, artificial meat (also known as "cell-based meat," "cell-cultured meat," "cultured meat," "cultivated meat," "in vitro meat" and "lab-grown meat") is the most striking example of cellular agriculture. This research aims to study Arab consumers' attitudes toward artificial meat, which is a topic of great interest to scientists and the media. An online survey was conducted with 1025 participants revealed that 17% consider artificial meat to be promising and acceptable. Over 40% would be willing to try this novel product, whereas 36% expressed reluctance and 22.7% were unsure. Among non-hesitant respondents, about 60% of all participants would be willing to eat artificial meat on a regular basis, particularly in restaurants (16.2%), at home (27.6%), and/or in ready-made meals (33.9%). Nevertheless, the majority of participants (55%) indicated a willingness to pay (WTP) less or much less (or even nothing at all) for artificial meat in comparison to conventional meat. A notable 27% of participants expressed a WTP the same price for artificial meat as for conventional meat. Conversely, only 14% of them indicated a WTP more for artificial meat. Income, gender, and age were the most important predictors of consumer acceptance. Young and middle-aged men and those with the highest monthly income are most likely to accept artificial meat. These are the consumers most likely to be targeted by those marketing artificial meat in Arabic-speaking countries. PRACTICAL APPLICATION: The demographic groups most likely to accept artificial or cell-based meat in Arab countries are young and middle-aged men and those with the highest monthly incomes. These are the consumers most likely to be targeted by those attempting to market artificial meat in Arabic-speaking countries. Consequently, the results of our study are directly relevant to understanding the potential approaches (and challenges) to selling artificial meat in this context.

Background/Objectives: The environmental problems associated with meat production, the pain and distress of animals, and health problems have contributed to the increased appreciation of meat alternatives. Methods: The review of patented inventions presenting plant-based meat analogues (PBMAs) issued in the years 2014-2023 was conducted according to PRISMA statements across the ISI Web of Science, as well as Google Patents and Espacenet Patent Search engines. Results: The analysis of 183 patents showed an increase in patent numbers in the years 2020-2022, with the greatest number of patents developed by teams consisting of two authors. The authors and patent applicants were mainly affiliated with the United States, while Société des Produits Nestlé S.A. emerged as the leader among applicant institutions. The International Patent Classification (IPC) codes were given to 177 patents, which were mainly classified as Human Necessities (Section A). In total, inventors mentioned 184 taxa, including 28 genera, 1 section, 144 species, 5 subspecies and 6 varieties of vascular plants. The majority of taxa showed a high edibility rating and belonged to perennials, mainly herbaceous plants representing the families Fabaceae, Poaceae and Brassicaceae. The analysis of patents showed that plants are a promising source of protein, lipids, fibre, polyphenols, starch and gum in meat analogues. At the same time, the noticed slight use of numerous taxa, despite the substantial content of valuable constituents as well as high edibility rates, presumably might be caused by their underutilization in numerous regions of the world. Conclusions: The direction of future studies should focus on searching for novel plant-based meat analogues based on underutilized, promising plant sources and investigations of their usefulness.

Abstract
This study investigates the structure of factors that influence consumer intentions to both try and to consume cultured proteins, and their intentions to substitute vegan, vegetarian and omnivore diets with these alternative protein sources. Comprehensive survey data (N = 3862) was collected from three Nordic countries (Denmark, Finland, and Norway) and analysed using confirmatory factor analysis and structural equation modelling. Theoretically, this article draws from behavioural models of environmental psychology, identity theory, and attitude theory. Results indicate that beliefs about the necessity of an industry producing cultured proteins and impacts of cultured proteins on the global economy are significant predictors of consumer intentions. Moreover, participants who exhibited high levels of general and food innovativeness were more likely to express positive intentions to consume cultured proteins. Social norms influenced consumer intentions: Individuals surrounded by positive attitudes and intentions toward cultured proteins within their social networks were more inclined to want to consume these products. The predictor variables in the final model accounted for between 39% and 66% of the variance in the different cultured proteins related intentions. Understanding consumer intentions better can inform targeted communication strategies aimed at promoting the advantages of cultured proteins and facilitating its adoption.

Abstract
The promotion of meat substitutes to reduce meat intake is a promising way to reduce the environmental and public health externalities of meat consumption while preserving the important role of taste and texture in meat products. However, the market for meat substitutes is developing more slowly than expected. Therefore, we analyze the factors associated with the heterogeneity in meat substitute consumption in Germany, a country where meat traditionally plays an important role. We use revealed preference data on meat substitute sales from 1025 individual retailers, sociodemographic data, and election results from 92 regions in Germany over the period 2017-2021, to analyze whether differences in meat substitute consumption are associated with consumers' political orientation (liberal/left or conservative/right) and socio-demographic variables. We also investigate whether election results for parties with stronger climate protection goals are associated with meat substitute consumption. Our results show that meat substitute consumption varies significantly across Germany and that this is related to differences in socio-demographic characteristics and voting behavior across regions. Voting for the Green Party and parties with strong climate protection ambitions is positively related to the market share of meat substitutes. In contrast, voting for Germany's most conservative party, which has the lowest ambitions in terms of climate protection targets, is associated with lower meat substitute consumption. Therefore, manufacturers could develop tailored marketing strategies that specifically target these voter groups in order to increase the market share of meat substitutes as alternatives to meat products.

Abstract
Cell-cultured meat holds significant environmental value as an alternative protein source. Throughout the 21st century, cell-cultured meat has progressively penetrated commercial markets. However, a systematic review encompassing the entire field needs improvement. Employing Citespace, Vosviewer, and R-Bibliometrix software, a bibliometric analysis was used to present the research progress and general development trends of 484 articles on cell-cultured meat from 2000 to 2022 based on countries, authors, institutions, and keywords. This analysis provides ideas for the future development of cell-cultured meat in different countries or regions worldwide. Research on cell-cultured meat from 2000 to 2022 has undergone two phases: fluctuating growth (2000-2013) and rapid growth (2013-2022). Noteworthy contributions to cell-cultured meat studies emerge from author groups in the United States of America, the United Kingdom, and China, with influential institutions like the University of Bath significantly impacting pertinent research. Furthermore, over the past two decades, research has leaned towards exploring topics such as "biomaterials", "cultured", "land use", "public opinion", "animal welfare", and "food safety". Furthermore, this study reveals differences in nomenclature between regions and institutions. "Cultured meat" is more popular in some countries than in other forms. Institutions in Asia use "cultured meat" more frequently; however, institutions in the Americas adopt "cultivated meat" and rarely adopt "in vitro meat", and institutions in the European region have no particularly prominent tendency towards a specific nomenclature. Future research should emphasize aligning the labeling of cell-cultured meat with effective management strategies and referencing regulatory policies across various countries. For the first time, we use three different bibliometric methods to analyze temporal and spatial variation in research on cellular meat. The results of this study have a multiplier effect. We provide a theoretical basis and a practical reference for the identification of alternatives in the dual context of "food crisis and food security" and "climate crisis". At the same time, we also provide a reference for the sustainable development of the food system.

Abstract
Cultured meat (also referred to as cultivated, cell-based, or cell-cultured meat) is a novel food technology that is presented as a method of meat production without reliance on large-scale industrial farming. The pro-cultured meat narrative rests, in part, on a moral foundation: cultured meat is purported to alleviate the environmental and animal welfare harms associated with farmed meat. Despite this narrative, no research has examined which moral values underpin attitudes towards cultured meat. To examine this, we surveyed 1861 participants from the United States and Germany about their moral foundations and their attitudes towards cultured meat. In line with predictions, people who more strongly endorse moral values about purity (i.e., had higher scores on the purity subscale of the moral foundations scale) held more negative attitudes towards cultured meat. However, this relationship was much more consistent among participants from the United States than participants from Germany. Against predictions, attitudes towards cultured meat were not reliably associated with the extent to which people focus on harm as a moral foundation. The latter finding was particularly surprising in light of harm-reduction narratives around cultured meat. These findings demonstrate the need for a more nuanced discussion about, and understanding of, consumer concerns around cultured meat and the values that underpin them.

Abstract
Introduction Food neophobia (FN) is a psychological trait that inhibits one's willingness to eat unfamiliar foods. It is related to the acceptance of insect foods and cultured meat, which are major protein alternatives to conventional meat, and is an important personality trait for understanding the near-future food industry. However, the factor structure of Pliner and Hobden's FN scale (FNS) is unstable due to respondents' cultural backgrounds. Thus, we aimed to develop a Japanese version based on the alternative FNS (FNS-A), the most recent revised version, and to examine its validity. Methods Four online surveys (preliminary 1: n = 202; preliminary 2: n = 207; main: n = 1,079; follow-up: n = 500) were conducted on the FNS-A. For the main survey, Japanese respondents (aged 20-69 years) answered the Japanese version of the FNS-A (J-FNS-A), their willingness to eat (WTE), and their familiarity with hamburgers containing regular protein foods (ground beef, tofu) and alternative protein foods (soy meat, cultured meat, cricket powder, algae powder, and mealworm powder). Results Consistent with the FNS-A, confirmatory factor analysis assuming a two-dimensional structure (approach and avoidance) showed satisfactory model fit indices. The mean J-FNS-A score (Cronbach's α for 8 items = 0.83) was 4.15 [standard deviation (SD) = 0.93]. J-FNS-A scores were not associated with age and gender, whereas a greater than moderate association was found with WTE hamburgers containing alternative protein foods (rs = -0.42 to -0.33). The strength of these negative associations increased as food familiarity decreased (r = 0.94). The test-retest reliability at 1 month was also satisfactory (r = 0.79). Discussion The validity of the J-FNS-A was confirmed. Higher J-FNS-A scores (mean = 41.51, SD = 9.25, converted to Pliner and Hobden's FNS score) of the respondents suggest that Japanese people prefer conservative foods. This scale could predict the negative attitudes toward foods with low familiarity, such as alternative proteins. The J-FNS-A appears to be a useful psychological tool for assessing Japanese food neophobia tendencies and predicting novel food choices of Japanese individuals.

Abstract
A glutenin (G)-chitosan (CS) complex (G-CS) was cross-linked by water annealing with aim to prepare structured 3D porous cultured meat scaffolds (CMS) here. The CMS has pore diameters ranging from 18 to 67 μm and compressive moduli from 16.09 to 60.35 kPa, along with the mixing ratio of G/CS. SEM showed the porous organized structure of CMS. FTIR and CD showed the increscent content of α-helix and β-sheet of G and strengthened hydrogen-bondings among G-CS molecules, which strengthened the stiffness of G-CS. Raman spectra exhibited an increase of G concentration resulted in higher crosslinking of disulfide-bonds in G-CS, which aggrandized the bridging effect of G-CS and maintained its three-dimensional network. Cell viability assay and immuno-fluorescence staining showed that G-CS effectively facilitated the growth and myogenic differentiation of porcine skeletal muscle satellite cells (PSCs). CLSM displayed that cells first occupied the angular space of hexagon and then ring-growth circle of PSCs were orderly formed on G-CS. The texture and color of CMS which loaded proliferated PSCs were fresh-meat like. These results showed that physical cross-linked G-CS scaffolds are the biocompatible and stable adaptable extracellular matrix with appropriate architectural cues and natural micro-environment for structured CM models.

Abstract
According to the definition adopted in the European Union, novel foods are foods that were not consumed to a significant degree within the Union before May 15, 1997. This includes cultivated meat and insects. Novel foods are meant to play a critical role in the transition towards sustainable food systems. However, their success depends on whether and to what extent they will be incorporated into the diets at the population level. This review investigates consumers' perception of novel food products by narratively synthesising results on the influence of heuristics and biases triggered by emotions, personality traits, and socio-cultural factors. Empirical studies conducted in Western countries and published in English after 1997 were eligible, which led to 182 studies being included. Notably, most included studies focused on insects and cultivated meat. Disgust and fear are shown to be the main emotions driving rejection of novel foods, together with food neophobia and specific cultural norms common across countries included in the scope of the review. Familiarity with novel foods and curiosity both led to higher acceptance. Despite being investigated directly in a minority of studies, heuristics and related biases mostly fell under the "affect," the "natural-is-better," and the "trust" heuristics. The review also discusses to what extent consumers' perception reflects in the regulatory framework applicable to novel foods in the European Union, how it influences the regulation of insects and cultivated meat and which lessons can be drawn for the future of the regulatory framework.

Abstract
The development of plant-based meat analogues has become a significant challenge for the food industry in recent years due to the increasing demand for sustainable and healthier proteins in the context of a global protein transition. Plant-based meat analogues imitate the visual, textural, and chemical properties of traditional meat products and are required to closely resemble meat to appeal to consumers. In addition, consumers demand natural, clean-label, and nutritional, and healthy products. To address these challenges, the food industry must develop highly healthy, nutritious, and E-number-free meat analogue products. Understanding the functionality of each ingredient and its role in the food matrix is crucial to being a key player in the innovation of the meat analogue market. This review provides updated information on the primary ingredients utilized for the development of plant-based burger meat alternatives and their functionality. The key components of meat analogue burgers are outlined, including plant proteins, binding agents, fats and oils, flavorings, colorings, preservatives, fortificants, and clean-label considerations.

Abstract
The prospects of developing a global market for cultured meat are arguably beginning to increase due to an increase in Scientific breakthroughs that are lowering the cost of production of cultured meat. This study aims to assess consumers' receptiveness to cultured meat by evaluating the valency of positive and negative perceptions toward cultured meat. It does this by reviewing the poll statistics of past studies that evaluated consumers' risk and benefit perceptions of cultured meat. The study's results indicated that consumers had a strong belief in the possible social, cultural and ethical benefits associated with cultured meat. The findings also showed that consumers' biggest concern was about its possible low quality. The regional analysis indicated that statistics from the North American countries showed very high positive perceptions about cultured meat while statistics from developing countries indicated the most reservations about the product. The results dispelled the belief that social and cultural issues would rank highest as hinderances to consumer acceptance in developing countries and highlighted differing motivators for acceptance in Eastern and Western Europe. The evidence-based knowledge reported in this paper is useful in giving insights of how a global cultured meat industry could be distributed and which perception areas would present the biggest challenges or drivers of consumer acceptance.

Abstract
Alternative proteins have gained popularity as consumers look for foods that are healthy, nutritious, and sustainable. Plant proteins, precision fermentation-derived proteins, cell-cultured proteins, algal proteins, and mycoproteins are the major types of alternative proteins that have emerged in recent years. This review addresses the major alternative-protein categories and reviews their definitions, current market statuses, production methods, and regulations in different countries, safety assessments, nutrition statuses, functionalities and applications, and, finally, sensory properties and consumer perception. Knowledge relative to traditional dairy proteins is also addressed. Opportunities and challenges associated with these proteins are also discussed. Future research directions are proposed to better understand these technologies and to develop consumer-acceptable final products.

Abstract
The current food system, which is responsible for about one third of all global gas emissions, is considered one of the main causes of resource depletion. For this reason, scientific research is investigating new alternatives capable of feeding an ever-growing population that is set to reach 9-11 billion by 2050. Among these, cell-based meat, also called cultured meat, is one possible solution. It is part of a larger branch of science called cellular agriculture, whose goal is to produce food from individual cells rather than whole organisms, tracing their molecular profile. To date, however, cultured meat aroused conflicting opinions. For this reason, the aim of this review was to take an in-depth look at the current European legislative framework, which reflects a 'precautionary approach' based on the assumption that these innovative foods require careful risk assessment to safeguard consumer health. In this context, the assessment of possible risks made it possible not only to identify the main critical points during each stage of the production chain (proliferation, differentiation, scaffolding, maturation and marketing), but also to identify solutions in accordance with the recommendations of the European Food Safety Authority (EFSA). Further, the main challenges related to organoleptic and nutritional properties have been reviewed.. Finally, possible future markets were studied, which would complement that of traditional meat, implementing the offer for the consumer, who is still sceptical about the acceptance of this new product. Although further investigation is needed, the growing demand for market diversification and the food security opportunities associated with food shortages, as well as justifying the commercialisation of cultured meat, would present an opportunity to position cultured meat as beneficial.

Abstract
Expectations for the industrialization of cultured meat are growing due to the increasing support from various sectors, such as the food industry, animal welfare organizations, and consumers, particularly vegetarians, but the progress of industrialization is slower than initially reported. This review analyzes the main issues concerning the industrialization of cultured meat, examines research and media reports on the development of cultured meat to date, and presents the current technology, industrialization level, and prospects for cultured meat. Currently, over 30 countries have companies industrializing cultured meat, and around 200 companies that are developing or industrializing cultured meat have been surveyed globally. By country, the United States has over 50 companies, accounting for more than 20% of the total. Acquiring animal cells, developing cell lines, improving cell proliferation, improving the efficiency of cell differentiation and muscle production, or developing cell culture media, including serum-free media, are the major research themes related to the development of cultured meat. In contrast, the development of devices, such as bioreactors, which are crucial in enabling large-scale production, is relatively understudied, and few of the many companies invested in the development of cultured meat have presented products for sale other than prototypes. In addition, because most information on key technologies is not publicly available, it is not possible to determine the level of technology in the companies, and it is surmised that the technology of cultured meat-related startups is not high. Therefore, further research and development are needed to promote the full-scale industrialization of cultured meat.

Abstract
The rising demand for plant-based meat (PBM) has the potential to minimize environmental degradation and save the lives of numerous animals. Furthermore, the intention to consume eco-friendly products triggers people to consume PBM. However, it is essential to understand the factors that influence consumer intentions and actual PBM consumption to enhance its adoption. By incorporating the Theory of Consumption Value, this study examines the impact of health consciousness, health motivation, personal innovativeness, perceived critical mass, perceived cost, and perceived product value on the intention to consume PBM. The impact of intention to consume PBM on actual consumption is also analyzed. Furthermore, the mediating role of the intention to consume PBM in the relationship between these factors and actual consumption behavior is investigated. Using a cross-sectional research design, 978 responses were obtained from Indonesia. The data were analyzed using partial least squares structural equation modelling (PLS-SEM). The results showed that health motivation, perceived critical mass perceived cost, and perceived product value were significant predictors of the intention to consume PBM. However, health motivation and personal innovation had insignificant effects on the intention to consume PBM. Moreover, the intention to consume PBM translated into actual consumption behavior. Furthermore, the intention to consume PBM significantly mediated the relationship between actual consumption behavior and factors other than health motivation, personal innovation, and perceived product value. The findings offer valuable insights for industry, policymakers, and producers interested in PBMA markets in developing focused marketing strategies, improving consumer perceptions, and addressing barriers, such as perceived costs to promote PBM consumption, particularly in emerging markets. Integrating the theory of consumption value and PLS-SEM provides a comprehensive understanding of the underlying dynamics and sheds light on the unique factors driving PBM consumption behavior.

Abstract
Cell-cultured meat (CM) is a novel meat product grown in vitro from animal cells, widely framed as equivalent to conventional meat but presented as produced in a more sustainable way. Despite its limited availability for human consumption, consumer acceptance of CM (e.g., willingness to purchase and consume) has been extensively investigated. A key but under-investigated assumption of these studies is that CM's sensory qualities are comparable to conventional, equivalent meat products. Therefore, the current review aims to clarify what is actually known about the sensory characteristics of CM and their potential impact on consumer acceptance. To this end, a structured scoping review of existing, peer-reviewed literature on the sensory evaluation of CM was conducted according to the PRISMA-ScR and Joanna Briggs Institute guidelines. Among the included studies (N = 26), only 5 conducted research activities that could be termed "sensory evaluation," with only 4 of those 5 studies evaluating actual CM products in some form. The remaining 21 studies based their conclusions on the sensory characteristics of CM and consequent consumer acceptance to a set of hypothetical CM products and consumption experiences, often with explicitly positive information framing. In addition, many consumer acceptance studies in the literature have the explicit goal to increase the acceptance of CM, with some authors (researchers) acting as direct CM industry affiliates; this may be a source of bias on the level of consumer acceptance toward these products. By separating what is known about CM sensory characteristics and consumer acceptance from what is merely speculated, the current review reported realistic expectations of CM's sensory characteristics within the promissory narratives of CM proponents.

Abstract
Cultured meat, produced by culturing animal cells in vitro, is gaining increasing interest. The first products obtained using this technology were authorized for human consumption in Singapore and the United States, and more are likely to follow in other parts of the world. Therefore, it is important to assess the attitudes toward such meat in various populations and understand the grounds for its acceptance and rejection. The present cross-sectional online study of adult Poles (n = 1553) aimed to evaluate knowledge of cultured meat, the main reasons and fears associated with its production and consumption, and willingness to buy it and factors influencing such willingness. Most respondents (63%) were familiar with the concept of cultured meat, and 54% declared to purchase it when available. However, concerns over safety were expressed by individuals accepting (39%) and rejecting (49%) such meat. The main motivations for choosing it included limiting animal suffering (76%) and environmental impacts of meat consumption (67%), although over half of responders willing to buy these products were driven by curiosity (58%). Multiple logistic regression revealed that odds (OR; 95%CI) for accepting cultured meat were significantly increased for adults aged 18-40 (1.8; 1.2-2.7); women (1.8; 1.2-2.7); meat eaters (8.7; 5.6-13.6); individuals convinced that animal farming adversely affects the climate (7.6; 3.1-18.3), surface waters (3.1; 1.2-8.1), and air quality (3.0; 1.2-7.6); those familiar with cultured meat concept (4.2, 2.2-8.4); and those revealing high openness to experience (1.7; 1.2-2.4). The results highlight that the Polish population may be moderately ready to accept cultured meat and identify the groups resistant to accepting it. Well-designed and transparent promotion of these products is required to increase the general public's understanding of the potential benefits and challenges of cultured meat technology.

Abstract
In a competitive environment, the relationship between global and local fashion in shaping consumption behavior is under question. This study explores the antecedents of consumers' purchasing intentions for local fashions, mainly considering buying intentions for global alternatives, price, and product design while controlling for age, income, gender, geographic location, and occupation. We discovered that consumers' buying intentions for global fashion harm their intent to buy local substitutes, based on a non-probability survey of 260 young adults and hierarchical multiple regression analysis. We associate these findings with cultural identity theory, social identity theory, ethnocentrism, substitute versus complementary concepts, and cue utilization theory. International marketers can devise marketing strategies referring to these findings.

Abstract
Present food systems threaten population and environmental health. Evidence suggests reduced meat and increased plant-based food consumption would align with climate change and health promotion priorities. Accelerating this transition requires greater understanding of determinants of plant-based food choice. A thriving plant-based food industry has emerged to meet consumer demand and support dietary shift towards plant-based eating. 'Traditional' plant-based diets are low-energy density, nutrient dense, low in saturated fat and purportedly associated with health benefits. However, fast-paced contemporary lifestyles continue to fuel growing demand for meat-mimicking plant-based convenience foods which are typically ultra-processed. Processing can improve product safety and palatability and enable fortification and enrichment. However, deleterious health consequences have been associated with ultra-processing, though there is a paucity of equivocal evidence regarding the health value of novel plant-based meat alternatives (PBMAs) and their capacity to replicate the nutritional profile of meat-equivalents. Thus, despite the health halo often associated with plant-based eating, there is a strong rationale to improve consumer literacy of PBMAs. Understanding the impact of extensive processing on health effects may help to justify the use of innovative methods designed to maintain health benefits associated with particular foods and ingredients. Furthering knowledge regarding the nutritional value of novel PBMAs will increase consumer awareness and thus support informed choice. Finally, knowledge of factors influencing engagement of target consumer subgroups with such products may facilitate production of desirable, healthier PBMAs. Such evidence-based food manufacturing practice has the potential to positively influence future individual and planetary health.

Abstract
A variety of approaches to reducing the environmental impact of food production and consumption are being explored including technological solutions, such as food produced via biotechnological processes. However, the development of these technologies requires significant upfront investment and consumer acceptance is not guaranteed. The purpose of this research is to develop a system dynamics model to forecast demand, under multiple marketing and quality scenarios, for foods produced via novel technologies, using cellular agriculture as a case study. The model considers consumer heterogeneity, product awareness, word of mouth marketing (WOM), in-store marketing options, pricing options and product utility to estimate diffusion rates and market penetration. To our knowledge, there is no demand forecasting model available for food produced via novel technologies which relies on purchase intention data and incorporates all these factors. Therefore, this research closes a critical gap for that industry. Ultimately, the model shows that price and the consumers' utility for the product drives the final demand regardless of marketing scenario. Further, the rate of diffusion was highest when product samples are provided in store for all scenarios except when product utility is low and the product price is high. Model results suggest that market saturation was reached within the 32-week trial period when the price of the cellular agriculture product was the same as a traditional product but not when the price was double that of traditional meat. Given the lack of available trial data, the model scenarios should be considered a prior probability which should be refined as more data becomes available.

Abstract
The drive to encourage consumers to reduce animal meat protein has resulted in a substantial market for plant-based meat products. Despite willingness and acceptance among certain sectors of the population, there remains a large proportion of consumers unwilling to try plant-based meat. Through the lens of political ideology and applying message congruence theory, we demonstrate that current message framing is incongruent to conservative consumers in the USA. A pre-test (n = 262), using political ideology to predict willingness to try plant-based meat, revealed a significant effect such that conservatives were significantly less likely to want to learn about plant-based meat or to try it. A content analysis (n = 82) of press releases from a major plant-based meat company highlights that plant-based meat is promoted based on three key benefits: taste, health and the environment. Finally, in an experiment, conservative participants (n = 200) were randomly assigned to view an advertisement for a plant-based meat company that either cited environmental benefits or did not. Results demonstrate the presence of incongruence in messaging, where environmental benefits are shown to be less effective for conservative leaning consumers.

Abstract
Consumer awareness of meat-associated health and environmental risks is increasing and motivates a shift toward consuming meat alternatives. This is also reflected in efforts invested in studying meat alternatives from the perspective of nutritional, environmental, and consumer sciences. Despite shared research interest, these studies cannot be readily compared and interpreted because there is no clear consensus on what meat alternatives are. Scholarly debates on acceptance, nutritional value, and environmental advantages of meat alternatives would benefit from a clear definition of meat alternatives. With the goal of defining meat alternatives, relevant scientific literature in the past 10 years was systematically searched and screened guided by the scoping review Preferred Reporting Items for Systematic Reviews and Meta-Analyses extension. The initial search resulted in >100,000 hits, which was reduced to 2465 papers. Next, titles and abstracts were scrutinized using Rayyan.ai, resulting in 193 articles considered for the present review. Article screening and data extraction was performed using ATLAS.ti software. Three major themes were identified to define meat alternative products including: 1) producing and sourcing of ingredients; 2) product characteristics (that is, sensory characteristics, nutritional value, and health profile, social and environmental sustainability profile); and 3) consumer characteristics concerning the marketing and consumption context. Meat alternatives are multifaceted, that is, certain products can be considered as meat alternatives in some context, but not in another context. For any product, it is impossible to unequivocally state that it is a meat alternative. There is a lack of consensus from the diverse literature on what constitutes meat alternatives. However, products may be qualified as meat alternatives according to three key criteria as proposed in a taxonomy: 1) production and sourcing, 2) product characteristics, and/or 3) consumption. We recommend researchers (and other stakeholders) to do so as it allows for better informed future discussions of meat alternatives.

Abstract
The aim of this study was to investigate how consumers (n = 2,171) originated from South-Western Europe (Italy, Portugal, and Spain) perceive cultured "meat" (CM) and if their demographic characteristics (origin, gender, age, education, occupation, and meat consumption) are related to their willingness to try (WTT), to regularly eat (WTE) and to pay (WTP) for CM. We found the current respondents had an initially positive attitude towards CM: 49% of them perceived CM as "promising and/or acceptable" and 23% "fun and/or intriguing" whereas 29% considered it as "absurd and/or disgusting". In addition, 66 and 25% would be willing and not willing to try CM, respectively. However, 43% had no WTE for CM and, 94% would not pay more for CM compared to conventional meat. Age and especially occupation were good indicators of consumer acceptance of CM. Respondents of 18-30 years of age had the highest acceptance. Respondents outside the meat sector had the highest WTE and people working within the meat sector had the lowest WTE, scientists (within or outside the meat sector) had the highest WTT, people not scientists but within the meat sector had the lowest WTT. Additionally, we found that men are more likely to accept CM than women, Spanish-speaking consumers had the highest WTT and WTE, people with vegan and vegetarian diets may pay more for CM but generally no more than for conventional meat. The perceptions that CM may be more eco-friendly, ethical, safe and healthy than conventional meat, and to a lower extent, the perception that current meat production causes ethical and environmental problems are likely to be major motives for the current respondents to try, regularly eat and pay for CM. On the opposite, lower perceptions of CM benefits and of conventional meat weaknesses more generally, plus emotional resistance towards CM are main barriers to accept CM.

Abstract
The livestock sector is under increasing pressure to respond to numerous sustainability and health challenges related to the production and consumption of livestock products. However, political and market barriers and conflicting worldviews and values across the environmental, socio-economic and political domains have led to considerable sector inertia, and government inaction. The processes that lead to the formulation of perspectives in this space, and that shape action (or inaction), are currently under-researched. This paper presents results of a mixed methods exploration of the influence of environmental worldviews, values, and demographic factors on perspectives towards the future of the livestock sector. The approach combines survey and interview data derived from a sample of livestock representatives (N = 307). Respondents with higher pro-environmental, ecocentric and relational worldviews and values favour more behaviour-oriented solutions. Those with lower pro-environmental and higher techno-centric worldviews and values favour technological solutions to improve the efficiency of production and to enable continued patterns of meat consumption. Demographic variation and qualitative data emphasise the need to recognise cultural and geographic nuance in narratives. This study improves our understanding of the processes that lead to the formulation of perspectives, enabling the development of more holistic solutions that acknowledge all voices in an increasingly polarised debate. Adopting more pluralistic, relational methodologies will therefore be paramount in developing solutions for sustainable livestock futures.

Abstract
This study examined the potential benefits of male specific-pathogen-free (SPF) White Leghorn embryos in cellular agriculture for sustainable and ethical poultry meat production-addressing traditional farming challenges, including disease outbreaks of Salmonella and Avian influenza. We isolated myogenic precursor cells (MPCs) from the thigh muscles (Musculus femoris) of 12.5-day-old embryos from 10 SPF White Leghorns that tested negative for Salmonella. We randomly selected MPCs from three males and three females, isolated them using a modified pre-plating (pp) method, and compared their in vitro development. After 1 h (pp1) and 2 h (pp2) of incubation, they were transferred to a new dish to remove fast-adhering cells and cultured (pp3). Isolated MPCs had a 69% positive reaction to Pax7. During proliferation, no differences were observed in PAX7, MYF5, or MYOD expression between the male and female MPCs. However, after five days of differentiation, the expression of late myogenic factors-MYOG and MYF6-significantly increased in all MPCs. Notably, MYOG expression was 1.9 times higher in female than in male MPCs. This impacted MYMK's expression pattern. Despite this, the myotube fusion index did not differ between the sexes. Muscle cells from male SPF-laying chicken embryos are promising for developing clean animal-cell-derived protein sources via resource recycling.

Abstract
Edible microbeads are hotly sought after for emerging cell-based meat culture but there are no major breakthroughs so far. Herein we report a functional edible microbead with alginate as core coated with pumpkin proteins as shell. Proteins from 11 plant-seeds were extracted and tested their cytoaffinity as gelatin replacer by grafting them on alginate microbeads and pumpkin seed protein coated microbeads shown the best performance in stimulating proliferation of C2C12 cells (by 17 folds in a week), 3T3-L1 adipocytes, chicken muscle satellite cells and primary porcine myoblast. The cytoaffinity of pumpkin seed protein coated microbeads comparable with that of animal gelatin microbeads. Protein sequencing analysis on pumpkin seed proteins found that it is rich in RGD tripeptide moiety, which are known to be enhance cytoaffinity. Our work advances our search for edible microbeads as ECM materials for cell-based meat culture.

Abstract
Meat and meat products are important sources of protein in the human diet. However, their consumption or excessive consumption has been questioned as this has been related to sustainability and health issues. Due to this, alternatives to conventional meat consumption, such as meat produced more sustainably or meat alternatives, have been considered. The aim of the present work is to gain insight into the meat consumption of different countries, the motives for and barriers to this consumption, as well as into the consumption of more sustainably produced meat with particular focus on organic meat and meat alternatives. Information on meat consumption has been obtained using FAOSTAT data and maps have been constructed using SAS software. Results showed that, in general, albeit with variations between and within countries, there is a tendency to decrease red meat consumption and increase poultry consumption, while for pork consumption the tendency is less clear. Motives and barriers for meat and meat alternative consumption have been reviewed and it is possible to see that these are very variable and that they, in addition to the intrinsic and extrinsic characteristics of the meat, are also related to consumers' attitudes and beliefs. Thus, it is important to inform consumers in a truthful and reliable way in order to allow them to make well-founded decisions regarding the consumption of these products.

Abstract
It is evident that over-consumption of meat can contribute to the emission of hazardous greenhouse gases. One viable way to address such climate impact is to make people become more aware of more sustainable diet options, such as cultivated meat. However, it is challenging to instigate change in people's meat-eating habit, and empirical works have been examining the psychological factors that are related to consumers' willingness to consume cultivated meat. Research has suggested that psychological well-being can play a role in the meaning-making of food consumption, with higher well-being individuals showing more recognition of other sociocultural benefits of consuming food beyond just fulfilling their sustenance needs. As existing works have yet to understand the link between well-being and consumption of novel foods, the current research set out to fill this gap by examining the relationship between people's psychological well-being and their willingness to consume cultivated meat via different reasons (mediators) for consuming cultivated meat. We recruited a representative sample of 948 adults in Singapore to complete an online survey. The study offered the first evidence that there is a positive relationship between people's psychological well-being and their willingness to consume cultivated meat. Further, results revealed that their higher willingness can be motivated by the perception that cultivated meat is as healthy and nutritious, as safe as, and has the same sensory quality as real meat, and is beneficial to the society. This investigation adds to the growing literature on consumer acceptance of cultivated meat by showing the novel finding that well-being and receptivity to cultivated meat is positively linked, and such a positive link can be explained by people's better recognition of the prospective benefits offered by this alternative food.

Abstract
Meat production and consumption are sources of animal cruelty, responsible for several environmental problems and human health diseases, and contribute to social inequality. Vegetarianism and veganism (VEG) are two alternatives that align with calls for a transition to more ethical, sustainable, and healthier lifestyles. Following the PRISMA guidelines, we conducted a systematic literature review of 307 quantitative studies on VEG (from 1978 to 2023), collected from the Web of Science in the categories of psychology, behavioral science, social science, and consumer behavior. For a holistic view of the literature and to capture its multiple angles, we articulated our objectives by responding to the variables of "WHEN," "WHERE," "WHO," "WHAT," "WHY," "WHICH," and "HOW" (6W1H) regarding the VEG research. Our review highlighted that quantitative research on VEG has experienced exponential growth with an unbalanced geographical focus, accompanied by an increasing richness but also great complexity in the understating of the VEG phenomenon. The systematic literature review found different approaches from which the authors studied VEG while identifying methodological limitations. Additionally, our research provided a systematic view of factors studied on VEG and the variables associated with VEG-related behavior change. Accordingly, this study contributes to the literature in the field of VEG by mapping the most recent trends and gaps in research, clarifying existing findings, and suggesting directions for future research.

Abstract
Previous studies dealing with plant-based meat analogs confirmed the potential of oral processing methods to identify options for improving those products. Knowing that sensory perception can be influenced by adding condiments, this short communication aimed to investigate the texture and oral processing of four plant-based burger analogs and a beef burger when consumed in portions or as part of model meals with buns and sides. Texture profile analysis indicated that beef burgers and analog E were the toughest. Two analogs (B and S) showed textures close to beef, while one (analog D) displayed significantly lower values for hardness, toughness, cohesiveness, and springiness. The instrumental data was only partly reflected in the mastication parameters. Adaptations in mastication behavior were expected, but differences between the plant-based analogs were smaller than anticipated, although clear differences were observed for consumption time, number of chews and number of swallows. On the whole, mastication patterns concurred within different consumption scenarios (portions, model burgers), and significant correlations with instrumental texture were obtained.

Abstract
Exploring everyday life dynamics in meat reduction - a cluster analysis of flexitarians in Denmark. Flexitarians are attracting increasing attention in the research on meat reduction. But there has been limited focus on comprehensive understandings of a broader range of dynamics that can work as barriers and facilitators for meat reduction. In this article, we use social practice theory (SPT) as a comprehensive approach to barriers and facilitators in meat reduction in everyday life. We present an analysis of data from a representative Danish cross-sectional survey. We show, first, that Danish flexitarians can be divided into four distinct clusters (what we will refer to as classes) in accordance with combinations of everyday facilitators and barriers. Second, we show that the prevalence of these classes varies considerably depending on how long people have been flexitarians. We argue that the patterns in this variation indicate that over time people transition to other classes where barriers to plant-rich eating become less significant, and routinization emerges in different ways. Finally, third, we show that flexitarians do report eating less meat than consumers who label themselves as eating meat with no restrictions. But we also highlight that the difference is relatively modest. Indeed, meat intake is still quite common even in classes where routinization is highest. Throughout the paper, we discuss similarities and differences between the SPT framework and another recent framework, the COM-B model, that also provides a comprehensive approach to the understanding of behavioural change.

Abstract
Structure-sensory relationships are essential for understanding food perception. Food microstructure impacts how a food is comminuted and processed by the human masticatory system. This study investigated the impact of anisotropic structures, explicitly the structure of meat fibers, on the dynamic process of mastication. For a general understanding of texture-structure relationships, the three typically used deformation-tests: Kramer shear cell-, Guillotine cutting- and texture-profile-analyses were conducted. 3D jaw movements and muscle activities of the masseter muscle were additionally tracked and visualized using a mathematical model. Particle size had a significant effect on jaw movements and muscle activities for both the homogeneous (isotropic) and fibrous (anisotropic) meat-based samples with the same composition. Mastication was described using jaw movement and muscle activity parameters determined for each individual chew. The adjusted effect of fiber length was extracted from the data, suggesting that longer fibers induce a more strenuous chewing in which the jaw undergoes faster and wider movements requiring more muscle activity. To the authors' knowledge, this paper presents a novel data analysis approach for identifying oral processing behavior differences. This is an advancement on previous studies because a holistic overview of the entire mastication process can be visualized.
