Dr. Guo-Xun Chen is a tenured associate professor in the Department of Nutrition at the University of Tennessee, Knoxville. He obtained his BS and MS degrees of Virology and Molecular Biology from Wuhan University, Wuhan, China. He completed his Ph.D degree of Biochemistry and Molecular Biology in the Department of Biochemistry and Molecular Biology, and completed his postdoctoral training in the lab of Nobel Laureates, Drs. Michael Brown and Joseph Goldstein in the Department of Molecular Genetics at the University of Texas Southwestern Medical Center at Dallas. In 2006, Dr. Chen became a faculty member at the University of Tennessee at Knoxville. Since then, Dr. Chen has taught courses in Advanced Human Nutrition, Macronutrient metabolism, and other undergraduate and graduate level course. Dr. Chen has been conducting research projects related to obesity and diabetes since 1995. Since 2006, Dr. Chen has focused on the roles of vitamin A in the development of metabolic diseases such as obesity and type 2 diabetes, and the regulation of glucose and lipid homeostasis. Dr. Chen has published 81 peer-reviewed articles. He had served as the President of the North American Chinese Society for Nutrition in 2020. He has been members of American Diabetes Association, American Heart Association and American Society for Nutrition for more than a decade. In addition, he is also life-time members of North American Chinese Society for Nutrition and Chinese American Diabetes Association. Currently, Dr. Chen serves as the Chair of the Nutritional Science and Metabolism Interest Group at the American Diabetes Association.
