Professor Eslick is an Epidemiologist at the University of Newcastle, based at the Hunter Medical Research Institute in The Centre for Digestive Health. Professor Eslick was previously the Director of The Whiteley-Martin Research Centre and The Centre for Evidence-based Surgery at The University of Sydney. He was also the Director of Research for the Nepean Blue Mountains Local Health District. In addition, he completed postdoctoral training at The Harvard School of Public Health, Harvard University and The School of Public Health, The University of Sydney.
